Phenology and Climatology

2015 was an early, hot and water deficit year. If bud burst does not begin until around April 10, then and thanks to high temperatures, the vines will develop rapidly. Flowering is done quickly in early June then the scorching temperatures will last all summer without a drop of water. In our clay-limestone soils, the adaptation to these extreme conditions of the vines over 20 years old was spectacular. For vines less than 20 years old, we experienced a blockage at mid-veraison which found a way out with the first rains in September. The first maturity analyzes showed a very important phenolic potential. What happened next was determined based on the desired end product. By starting the harvest on September 15, we focused above all on balance. Thus, we  preserve a beautiful freshness, we facilitate the vinification and ensure the aging potential. An unbalanced wine risks collapsing after only a few years in the cellar, like many wines from 2005, for example.
The bio-protection vinifications went perfectly and we were able to start at the very beginning of December in new barrels and 1 wine from our 3 usual coopers.
On this vintage, a fairly rare phenomenon, there was no need for fining.

Tasting notes

Dense ruby color with bluish reflections, sign of a beautiful youth. On the nose, fruity and even cooked fruit notes (strawberry, blackberry, morello cherry) mixed with the freshness of liquorice. There is a beautiful harmony because the aromas of aging do not take over the fruit. Aeration allows the appearance of roasted aromas, mocha, ground coffee on a vanilla hint. In the mouth, a tender attack and a fleshy volume restores the aromas of fruits. Nice length in the mouth with a pleasant freshness. Lots of generosity on the finish on spices and vanilla.

Presentation

2015 will be remembered - What a difficult year for the vineyard ; for each vintage, the terroir always plays a key role, but this is even more true in the extreme years and 2015 was one. Very hot but also very dry, the vines were able to develop remarkably on the clay-limestone slopes which both keep a certain freshness and at the same time benefit from water in depth.  Less true on the clayey-silty plots which suffered and experienced blockages. The vinifications (under close supervision) revealed in this 2015 aromatic treasures and a rare complexity. It will absolutely be necessary to follow its evolution on a regular basis to discover all the wonders that it will reveal as the years go by !!
