Phenology and Climatology

2016 resembles 2015 in many ways. The winter was a little rainier and cooler than in 2015; which did not prevent early bud burst. The climatic situation of spring was erratic until the beginning of June. Then it is a very hot and dry period until the beginning of September. Once again, the vine in general has adapted remarkably well and the small veraison blockages found a favorable outcome with the first rains in September. The first analyzes made it possible to appreciate the phenolic potential and the richness in anthocyanins of this vintage; the berry tasting will trigger the harvest on September 15th.
The organic protection vinification followed by Julien Belle for the 3rd consecutive vintage went perfectly. The only small problem that kept us going for a long time, the start of the recalcitrant malolactic fermentation due to a malic acid level that was too low!
Small novelty for this vintage, we have integrated a new cooper which was being tested for the 2015 vintage. The results being convincing, we now have a range of barrels with 4 coopers, half renewed every year.
Also a little novelty in the bottling which took place on April 26 and 27, 2018 since we have chosen to stopper most of our bottles with a technical stopper (DIAM). We have been testing it for 3 years, first on a small scale and then more consistently; it is clear that this cork perfectly meets our problems (cork taste and shatter) while being organoleptically neutral.

Tasting notes

Clear and brilliant, the color is deep ruby red. The first nose at the opening is fresh, vitalizing and finely vanilla. Mix of currant and fresh mint, a touch of turmeric, bramble. The sensation is juicy, almost rooty. The palate is opulent from the start, full, juicy, marked by a wrapped frame. Light toast, fresh coconut shavings. The finish is biscuit.

Presentation

2016 is the alter ego of 2015 - perhaps wiser because it is slightly less complex and perhaps a little silkier. But whatever the case, the framework is the same, the vinification and aging process are identical to 2015. We have chosen to pick up the bunches relatively early, from September 15, although the sanitary condition would have allowed 'go further, but what is now important for our wines is not so much the richness of the grapes but to keep enough acidity for a good balance. Looking at the reviews from the critics and listening to the opinions of our clients who have visited the property, it turns out that this 2016 is a magnificent and very consensual vintage.
